Job Summary
The Culinary Worker IV plans, coordinates and performs large-scale cooking and baking in a large food service unit.

Duties & Responsibilities

  • Assists in cooking meats and vegetables, carves meats, and assists in and supervises preparation of salads and desserts.
  • Supervises, instructs, and plans the work of others engaged in the preparation of complex quantity cooking and special diets. Supervisors will engage and implement University Housing's diversity, equity, and inclusion initiatives.
  • Trains culinary staff in food preparation, appearance standards, sanitation and safety.
  • Assists in controlling food waste by enforcing just in time cooking, reutilizing leftover products, and controlling food waste.
  • Provides courteous service to guest and promotes good customer relations
  • Prepares and bakes cakes, pastries, and hot breads as required.
  • Serves food as required.
  • Keeps records and makes reports regarding food inventories, product usage and shortages.
  • Assumes responsibility for sanitary conditions of kitchens, storerooms, and refrigerators.
  • Assists in the planning of menus as well as course preparation and production.
  • Estimates food quantities to be ordered and cooked for a designated number of persons to be served according to menus.
  • Requisitions food supplies from storeroom through supervisor.
  • Performs related duties as assigned.

    Physical Demands: The ability to work in a kitchen area which is heated by ovens and stoves. Position involves moderate lifting and remaining in a stationary position for long periods.

    Work Environment: The work is performed in an Industrial Kitchen where there is some discomfort in low temperature areas (-10 degrees F) and/or high temperature areas (90 degrees F). There is risk involved when working with dangerous machinery, wet floors, and exposure to open flames.

  • Minimum Qualifications
    1. Two (2) years (24 months) of experience in quantity cooking in a commercial setting.
    2. One (1) year (12 months) of experience comparable to that described in the lower level of this series.

    Knowledge, Skills and Abilities
  • 1.The ability to work in an environment with diverse staff and students.
  • 2.Food Handlers Certification (FHC) accredited by the American National Standards Institute Based may be required upon hire or a newly selected employee may be required to complete this training (or equivalent) during an initial training period.
  • 3.Knowledge of materials and methods used to prepare food on a large scale, use and care of relevant utensils and equipment and food values and nutrition.
  • 4.Knowledge of current principles and practices of large-scale kitchen management, sanitary procedures and directives.
  • 5.Ability - Plan simple menus.
  • 6.Supervision - Ability to supervise and instruct subordinates.
  • 7.Service Orientation - A strong service orientation, actively looking for ways to help people.
  • 8.Cleanliness -- Knowledge of sanitary procedures and directives.
  • 9.Standard mathematics such as addition, subtraction, calculation of fractions, percentages.
  • 10.Active Listening - Giving full attention to what other people are saying, taking time to understand the points being made, asking questions as appropriate, and not interrupting at inappropriate times.
  • 11.Reading Comprehension - Understanding written sentences and paragraphs in work related documents.
  • 12.Quality Control Analysis - Conducting tests and inspections of products, services, or processes to evaluate quality or performance.
  • 13.Evaluating Information to Determine Compliance with Standards - Using relevant information and individual judgment to determine whether events or processes comply with laws, regulations, or standards.
  • 14.Organizing, Planning, and Prioritizing Work - Developing specific goals and plans to prioritize, organize, and accomplish your work.
  • 15.Attention to Detail - Job requires being careful about detail and thorough in completing work tasks.
  • Appointment Information
    This is a 100% full-time Civil Service 3869 - Culinary Worker IV position, appointed on a 12-month basis. The expected start date is as soon as possible after 10/16/2022. Salary is commensurate with experience.
